The 5-gallon carboy is too small. You need to leave some extra room at the top of the fermenting bucket to accommodate the foamy “krausen” that forms on top of the beer during fermentation.

The airlock should be bubbling in intervals greater than 30 seconds. After two weeks, it is time to transfer your beer into a secondary fermentation vessel (our 5-gallon carboy).
