With the new name, the Seoul government hopes to draw a clear line between Korean kimchi and Chinese pickled vegetables – the latter of which are called pao cai (泡菜) in China.

Dozens of varieties of Asian vegetables are available in the U.S., and hundreds more are found around the world. Almost all of the Asian vegetables are in the cabbage family.
