Click on the "Text Fill" button, just above the Text Outline button, in the WordArt Styles section. Choose either "No Fill" or select a color that contrasts with the outline color you selected.

Type 1 Files (Outlines and Metrics) Type 1 fonts are distributed as two files, one for the font outlines and another for font metrics (widths, heights, kerning, etc.).
