There's actually a glimpse of this in-action in Mario Kart World's reveal trailer, when Birdo drives into a semi-truck in the middle of a race and then proceeds to plow over some fellow racers.

This includes what appears to be a pilotable hovercraft-like attachment for Mario and co's more standard karts, akin to that big-rig which was commandeered by Birdo in the initial reveal trailer.
