I wouldn’t start with raw bone because it can be dangerous if the cat doesn’t know how to chew it. Kittens especially are still learning to tear and chew meat properly.

However, if you're just feeding boneless meat, that's unbalanced (unless the cats are getting calcium elsewhere) -- so you need to add a bone and/or calcium supplement or bone to the meal to balance it out.

I've been attempting to transition for a month now using the same batch of chicken that I prepared. Some cats never have any problems eating them. Others have to learn how to properly chew bones. They may gag on bony parts at first when they try to swallow whole.
